Heat oven to 170°C. Line 2 trays with baking paper. 2. In a large bowl, whisk all dry ingredients. 3. Add egg, coconut nectar, and oil to the bowl. Mix until a dough forms. 4. Lightly flour a surface with buckwheat flour. Roll dough to 6 mm (1/4 inch) thick. 5. Cut shapes, place on trays. Re-roll scraps and repeat. 6. Bake 11–12 minutes until lightly golden. Cool on tray. 7. Enjoy!
